“Every chef aspires to having their own restaurant”, says Clive. “Cooking is in my blood.”
Clive Tolley has spent the majority of his lifetime in kitchens. He was a chef instructor in the RAF for more than four years then went on to work at various well-known hotels and before moving into education. For six years he was chef lecturer at Walsall College then moved to Birmingham College of Food as senior lecturer, eventually leaving as head of catering. It was work that gave him a strong base for running Ryecroft.
Clive’s personally trained team work superbly well together. They have a growing number of established specialities that are in constant demand, so menus reflect these with the essential creativity of new dishes.
A ‘character’ in his own right, as well as master minding the cuisine, Clive has been known to stroll out from the kitchen in his chef’s whites with guitar in hand to serenade his customers. It has become so popular that, by customer demand, Clive regularly puts on musical evenings.
Clive wants all his customers to feel ‘at home’ joining he and Diana and staff for dinner or a special occasion.
